make Moi Moi or steamed bean cakes with liver.
The current recipe is a rice dish. Rice has come to be
a universally enjoyed staple food. Depending on the region of
the world, there are different ways and
recipes for preparing rice dishes. The most common is your basic
boiled white rice that can be eaten with a variety of regional
sources.
Our current recipe for a rice dish is Coconut Rice with Pork
Chops.
Coconut rice is a simple tasty dish that is easy to
prepare.
Everything you need for this dish can be found in your local
grocery store.
Coconut Rice
With
Pork Chops
Ingredients:
Coconut rice (serves four)(1) Rice -- 2 cups (450g or 1lb)(2) Pork Chops -- 4 pieces(3) Coconuts -- 2 whole(4) Onions -- 1 Whole sliced(5) Black pepper -- 1 teaspoon(6) Fresh Chili Peppers -- 1 to 4 to taste (Grind to paste)(7) Vegetable Oil -- 3 tea spoons(8) Water -- 5 cups(9) Salt to taste
Preparation and Cooking:
Shell coconuts, wash and grate the meat into a bowl.
Using the 5 cups of water (about 1.5 cups at time) soak the grated coconut meat and strain the milky water into a clean bowl. Repeat the soak and strain until the gratings are free of milk.
In a large cooking pot with about 1/8 cup of water, bring pork chops and chopped onions to a boil.
Add salt, black pepper and ground fresh chilies.
Stir, cover and let cook for 2 minute.
Add vegetable oil, stir, cover and cook for additional minute.
Add 5 cups of coconut milk water and bring to a boil.
Add rice, cover and cook at high heat for 5 minutes
Lower heat and continue cooking till rice is done - no more excess water (5-15 minutes)
Turn off stove, remove from heat and serve.
Serve meal for four, one pork chop per person. Garnish each dish with green peas or lightly steamed vegetables.
